Carriage bolts versus Hex Head Bolts
I am about to replace the carriage bolts on a 1951 Riviera and wanted to know if there is any problem in replacing carriage bolts with hex head bolts as long as they are all silicon bronze. Is one stronger that another?

Same strength. They serve a different function. The carriage bolt recesses itself into the wood and is held there static so there is no need for another wrench to hold it while tightening the nut. With a hex head bolt you will need a washer under the head and one at the nut plus two wrenches to tighten her.
