Question on Progress Varnish

I have the botton and topsides on with new wood. I am about to set to finishing the bottom and I am pondering sealing the topsides, and perhaps adding a single coat of varnish.

Then I need to turn the boat back over and install the topside plank just below the deck sheer, alogn withthe remaing deck.

I was thinking of putting 2 coats of CPES and one coat of varnish just to protect the sides from contaminates and finger oil etc. during the remaining process and flipping. I am concerned that there might be an inevitable ding in the flipping process.

This would mean that there might be several months delay from inital topsides coat, and then the final fairing of the last plank and the real varnish buildup and finishing.

Any thoughts or experience here would be helpful.
