Any recommendations on where to buy, brand, or type of bleach to be used on the mahogany centerboard. This is my first time trying my hand at the restoration of a boat

I like Lite-N-Up wood bleach. Available from wood floor supply store. So far I have only found it in gallon jugs so you will have plenty. It is a two part process.
